Baby Food

Ingredients

1 lb. sweet potatoes (about 4 small or 1 large)
1 cup carrots, peeled and cut into 1/2-inch pieces
1 large apple, peeled, cored, and sliced

Directions

Preheat oven to 350 degrees. If using large sweet potato, cut into quarters. Poke a few holes into sweet potatoes. Roast for 45 minutes or until tender. Put carrot and apple pieces into a steamer filled with about 2 cups of water. Steam for 20 to 30 minutes or until tender. Once sweet potatoes are cool to the touch, remove skins. Puree sweet potatoes, apples, and carrots together in a blender or a food processor until completely smooth. Makes about 3 cups.

Note: If you desire, you can stir in 1/2 teaspoon of cinnamon or nutmeg at the end. You could also easily double the ingredients and turn the recipe into a whipped sweet potato side dish.

A serving is 1/4 cup. Each serving contains about 56 calories, 0 g fat, 0 g saturated fat, 0 g trans fat, 0 mg cholesterol, 35 mg sodium, 13 g carbohydrates, 4 g sugar, 2 g fiber, and 1 g protein.
